Ingredients:
1 whole(s) medium tortilla
1 whole(s) eggs
4 slice(s) honey ham thin sliced
1/3 cup(s) cheddar cheese shredded
2 tablespoon(s) sour cream
pinch(s) salt to taste
pepper to taste
Directions:
1. Scramble the egg over low/medium heat, seasoning with S/P, cooking until just slightly soft as they will continue cooking when you assemble the tortilla. Set aside. On low heat, warm the tortilla 1 minute. Add scrambled eggs in a line down the center of the tortilla, add ham on top, then cheese, then sour cream. Let it heat 2-3 minutes or until the cheese begins to melt. Fold each side in gently, pressing with a spatula so that it stays in place with the melted cheese. Heat an additional 1-2 minutes and then flip gently and heat for about 30 seconds so the top is slightly crunchy.
2. Turn off the heat, put the burrito onto a plate and enjoy! If I have it on hand, I eat it with a spring salad mix with a light dijon mustard dressing. SO good!
3. I substitute ingredients as well, depending on my mood. Onions, mushrooms, turkey, cheese, cream cheese, scallions, peppers, bacon, sausage. Or you can go the sweet route and use honey, any combination of fruit, powdered sugar, peanut butter, fruit preserves, nutella...really anything you can think of!
