I needed something quick and easy one morning for breakfast, I had some tortillas, eggs, and some stewed tomatoes left over from my chicken Florentine and cheese!
Ingredients:
tortilla-heated in microwave for about 20 seconds
2-3 eggs scrambled
tomatoes (i love using stewed tomatoes)-1-2 of the stewed tomatoes pieces, diced
any cheese you may have on hand, tear or cut your cheese up into small chunks
**of course you can throw anything you want into your breakfast burrito...make it your own
Directions:
1. Heat your skillet on med high heat, spray some non cooking spray
2. Heat your tortilla in microwave for about 20 seconds
3. break your eggs into a bowl, stir until lemon colored
4. pour eggs into pan, top with one or two of the stewed tomatoes diced up, and cheese
5. scramble together til eggs are cooked and cheese melted
6. transfer your scrambled eggs with tomatoes and cheese into your tortilla fold....
7. enjoy!
