Whole wheat tortilla and BOCA- great make ahead camping breakfast.
Ingredients:
4 eggs
1 cup egg whites
12 whole wheat tortillas
1 cup mushrooms, portabella
1/2 cup red bell pepper
1/2 cup yellow bell pepper
1/2 cup green bell pepper
1/2 cup onion
142 g (2) boca all-american flame grilled burgers
6 oz. feta cheese
Directions:
1. Sauté onion, bell peppers, mushrooms and set aside.
2. Beat eggs and egg whites together. Cook in a non-stick skillet over low heat.
3. Cut up burgers and brown in skillet.
4. Toss all ingredients in a large bowl.
5. Divide between 12 tortillas, roll tortillas up into burritos. Wrap in foil individually.
6. To reheat, lay foil wrapped tortilla in a hot iron skillet turn occasionally for about 3-5 minutes.
