This nutrient rich breakfast requires a little bit of forethought and intention. The staying power you get through your day from this meal makes the extra effort worth it. I am in the habit of eating this meal six days a week. Once you get in the habit, like with exercise, you don't notice it as being unusual anymore. The steel cut oats can take a long time to cook. However, since I don't have 30 minutes to cook my breakfast each morning, I soak the oats in three parts water to one part oats overnight in the pan I cook them in. Frozen berries make it possible to have this breakfast all year long. Fresh berries in season make this extraordinary. Blueberries are wonderful but I mix in blackberries, raspberries and marion berries for variety.
Ingredients:
1 cup blueberries
1/4 cup dry steel cut oats
1 tbsp flax seed, ground
1 tsp honey
Directions:
1. Add 3/4 cup water to 1/4 cup oats in a small sauce pan and cover. Leave overnight.
2. Uncover the oats and put over a medium-low heat for five minutes, stirring some as it thickens.
3. If you are using frozen berries I recommend thawing them overnight in a covered bowl over microwaving them. The microwave can destroy some of the nutrient properties.
4. Add the ground flax seed to the berries in your bowl. Add the cooked oats when they reach the texture and consistency you desire. Stir in the honey and enjoy your morning!
