These are a great way to start your day-they aren't crumbly, so these bars are the perfect on-the-go breakfast for little hands to grab on their way to school, or for bigger hands on their way to the office!
Ingredients:
2 eggs
3/4 cup brown sugar
1/2 cup vegetable oil
1/4 cup evaporated milk
1 teaspoon vanilla extract
2 1/2 cups old fashioned oats
1/2 cup whole wheat flour
1/2 cup flour, all purpose
1/2 teaspoon salt
3/4 cup raisins
1/2 cup walnuts, chopped
Directions:
1. In large bowl, mix eggs, sugar, oil, milk, and vanilla.
2. Seperately, combine flour, oats, and salt, then add to egg/sugar mixture.
3. Stir in raisins and walnuts.
4. Drop by tablespoonfuls onto parchment lined baking sheet, and bake at 350 degrees for 12-14 minutes, or until set.
5. Optional: press mixture into greased or parchment lined baking dish, and bake at 350 degrees for 15-20 minutes or until set, cutting into bars for serving.
