Spicy, not too sweet, home baked comfort food
Ingredients:
1 cup pumpkin, cooked and mashed
1/2 cup apple butter
1/2 cup sorghum
2 eggs
1 cup whole wheat flour
3/4 cup all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup water
1/2 cup chopped walnuts
Directions:
1. Preheat oven to 350 degrees F.
2. Beat applesauce and sorghum together in a medium bowl; add eggs and mix well.
3. Combine dry ingredients in another bowl.
4. Add dry ingredients and water to sorghum mixture. Mix in pumpkin and nuts.
5. Grease a loaf pan (9x5x3 ); spoon in batter.
6. Bake for 1 hour, remove from oven and place pan on cooling rack. Cool loaf 15 minutes before inverting to take it out of the pan.
7. If you like, ice with cream cheese thinned with sorghum.
