These breaded stuffed chicken breasts are great! They are moist and please even the most decerning palet. I have served these to children ages 6-18 with only rave reviews. If you don't have a cast iron pan. Feel free to use a glass baking dish when baking the chicken breasts. Enjoy!
Ingredients:
6 chicken breasts
4 tablespoons olive oil
1/2 cup cottage cheese
4 tablespoons basil pesto
1 1/2 tablespoons roasted red peppers, chopped
1/4 cup feta cheese
1/3 cup whole wheat flour
1/3 cup whole wheat bread crumbs
1/3 cup parmesan cheese
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary
2 eggs
3 tablespoons milk
Directions:
1. Pre-heat oven to 350 degrees.
2. Mix the filling ingredients together in a bowl with a fork.
3. Cut a pocket in the chicken breast. Be sure not to cut all the way through the breast. Keep the hole small.
4. Stuff approximately 2 tablespoons of filling in each breast.
5. Heat a cast iron skillet with 2 tablespoons of olive oil.
6. Brown the chicken breasts for 3 minutes on each side. Remove from pan.
7. Beat the wet mixture in a wide bowl with a fork, until it is a uniform color. In another bowl mix the breading ingredients.
8. Coat the chicken with the wet mixture and then place in the breading bowl and coat with the breading mixture.
9. Place into cast iron pan. Drizzle with olive oil and place in the hot oven. Bake for 15 minutes.
10. Remove and cover each breast with 1 tablespoon of mozzarella cheese. Return to the oven for 5 minutes.
