This is very tasty. You can use any kind of peppers you like. I lie to use bell peppers, chilies and banana peppers. The combination makes this even more unique. Enjoy. This is a great dish for breakfast, brunch or as an appetizer. Read more . Goes great with a salad for a nice lunch. Occasionally I make this with sourdough bread and I always substitute green olives for black olives since I like the green much better than the black. Enjoy
Ingredients:
1 loaf french bread sliced
2 fresh tomatoes petite diced
1 banana pepper chopped
1/2 cup crumbled feta cheese
1/3 cup black olives pitted and chopped
1 egg
1/3 bunch parsley finely chopped
1/2 teaspoon black pepper
1/2 teaspoon crushed pepper
1 teaspoon paprika
1/2 tablespoon olive oil
1/2 teaspoon salt
Directions:
1. Mix all ingredients except bread in a bowl.
2. Place tomato mixture on bread slices with a spoon.
3. Place the bread slices on a broiler tray
4. There will be some juice left in the bowl so put some on top of each slice
5. Broil 6 inches below heat for 10 minutes.
