Ingredients:
400g white bread
73g-100g sugar
175g butter or margarine soft
350g mixed fruit
2 eggs beaten
75ml g/mixed spice
caster sugar/ demerara sprinkles
Directions:
1. Soak the bread in water, squeeze out water and put bread in bowl
2. Add all other ingredients
3. Grease a tray bake tin and line with parchment paper
4. Set oven temp to 350 / 180
5. Spoon mixture into tin level out and bake for 11/4-11/2 hours
6. Remove tin from oven test with skewer comes out clean ready
7. While still warm sprinkle with caster or demerara sugar
8. Cool then cut into squares
