This recipe is taken from Quail Country published in Albany, GA and is an interesting variation on banana bread.
Ingredients:
1/3 cup chopped blanched almond
1 cup flour
3/4 cup fine graham cracker crumbs
2 tablespoons cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter
2/3 cup sugar
2 eggs
1 cup mashed ripe banana
Directions:
1. Combine almonds, flour, graham cracker crumbs, cocoa powder, baking powder, baking soda, and salt. Cream butter with sugar until fluffy, then beat in the eggs, one at a time. Beat in the mashed bananas until you have a smooth mixture. Stir in the dry ingredients mixture and blend well. Spoon into a well-greased 9 inch X 5 inch loaf pan Bake at 350 F for one hour, or until well done. Turn out on wire rack to cool. Do not slice until it has cooled. To serve cut into thin slices and serve, if wished, with soft butter or cream cheese.
