Not sure how to describe. I ran across this recipe awhile back and have fallen in love with it. VERY easy. Just give it a try once. I feel that if you give it a chance you'll like it and see the myriad of possibilities.
Ingredients:
2 c bread crumbs
2 eggs
1 1/2 c scalded whole milk
2 tbls unsalted butter
1/2 c a/p flour
1/2 tsp salt
3 tsp baking powder
1 tbls sugar
Directions:
1. Melt the butter in your scalded milk. Next soak the bread crumbs in the milk/butter. Add the YOLKS of the 2 eggs. Mix well. Sift the flour, baking powder, salt and sugar into the bread crumb mixture.
2. Beat the egg WHITES into stiff peaks. Now gently fold egg whites into bread crumb mixture.
3. Drop large spoon fulls onto a greased hot griddle. Cook until golden brown on both sides. Serve with butter and syrup, a fried egg, or what ever your little heart desires.
4. ( I put the milk and butter in a microwave safe bowl. Heat in the microwave 1 minute at a time until I can see it begin to foam. This is microwave scalding. Takes me only about 2 minutes this way.)
