Brazilian Vinagrette

This salad goes great with any meat dish. Try it with my Chicken Adobo!
Ingredients:
one large ripe tomato
one cucumber
1/4 medium red onion
1 green bell pepper
cilantro to taste
1 tablespoon olive oil
1 tablespoon white wine vinegar
2 tablespoons chopped cilantro
Directions:
1. Chop all of the veggies into small 1/2 inch pieces and toss in a bowl with the vinegar and olive oil. Right before serving add a little salt. Do not add salt before serving, as it will draw all of the moisture from the veggies.
