Brazilian Black Bean Soup

With a surprise dash of orange juice, this rich soup will be a favorite at your dinner table!
Ingredients:
1 tbsp. olive oil
3 c. onion, chopped
8 cloves garlic, minced and separated
1 carrot, diced
3 tsp. ground cumin
2 tsp. salt
1 chopped red bell pepper
2 (15 ounce) cans of black beans, (drain and rinse them)
1/2 c. water
1 c. orange juice
1 pinch cayenne pepper, or to taste
Directions:
1. In a large pot over medium heat, add EVOO. Add the onion, 1/2 the garlic, and carrots.
2. This will be seasoned with cumin and the salt.
3. Cook this until the carrots are tender.
4. Add the remaining garlic(add red pepper.)
5. To the pan add the beans, water, and the juice.
6. Season this with cayenne pepper.
7. Add half the mixture to a food processor, and puree.
8. Add this back to pot and stir.
9. Simmer for at least 10 minutes! Enjoy!
