The name of these old-fashioned cookies comes from the Brandy in the ingredients - not because the first batch was made by Brandy! Cooks have been preparing these sweet concoctions for many centuries and you can see why once you have tasted them.
Ingredients:
cookie
1/2 cup margarine or butter
1/2 cup dark corn syrup
1/3 cup packed brown sugar
2 tsp brandy
3/4 cup all purpose flour
1/2 tsp ground ginger
filling
1 cup chilled whipping cream
2 tbls powdered sugar
1 tbl brandy
Directions:
1. Heat oven to 350º.
2. Heat margarine/butter, corn syrup and brown sugar to boiling in 1 1/2-quart saucepan.
3. Stir frequently; remove from heat.
4. Stir in 2 teaspoons brandy.
5. Mix flour and ginger; gradually stir into syrup mixture.
6. Drop dough by teaspoonfuls about 5 inches apart onto lightly greased cookie sheets.
7. Bake until cookies have spread into 3 – 4 inch rounds and are golden brown (6-8 minutes).
8. Cool cookies 1 – 3 minutes before removing from cookie sheets.
9. Working quickly, roll each cookie on greased handle of wooden spoon; slip from spoon and place on wire racks.
10. If cookies become too crisp to roll, return to oven to soften about 1 minute.
11. Beat whipping cream and powdered sugar in chilled bowl until stiff.
12. Fold in 1 tablespoon brandy.
13. Using decorator’s tube with plain tip, pipe whipped cream into each end of cookies.
14. Note: Store unfilled cookies in an airtight container.
