This isn't really fondue since it's baked, but it's similar. It's a warm and very flavorful cheese dip and it's delicious!
Ingredients:
1 tablespoon butter, unsalted
1 small onion, chopped
1 tablespoon brandy
1 cup mayonnaise
2 cups shredded swiss cheese
1/2 cup grated parmesan cheese
dippers: baguette slices, broccoli and cauliflour florettes, carrot and celery sticks.
Directions:
1. Position your oven rack to the center of the oven. Preheat oven to 350°.
2. In a saucepan over medium-heat, melt butter.
3. Add onion and cook, stirring often, until the onions are translucent.
4. Remove from heat and stir in the Brandy.
5. In a bowl, mix mayonnaise, swiss cheese, and parmesan cheese.
6. Stir in onions and mix well.
7. Transfer to a heat-proof 1 quart baking dish.
8. At this point, you can cover with plastic wrap and refrigerate if making the day before. You'll just have to adjust the cooking time to accomodate the chilled dish.
9. Bake until bubbly, about 30 minutes, and serve hot with dippers.
10. **A breath mint after consumption is optional :D) ...thanks Angelgal!
