This is possibly one of the best chicken recipes I have ever made!
Ingredients:
5 chicken tenderloins or 5 boneless skinless chicken breasts
1 dash salt
1 dash pepper
all-purpose flour, enough to coat chicken
1/4 cup butter
1/4 cup chicken broth
1/4 cup brandy
1/8 cup berry juice (like raspberries or blackberries, optional) (optional) or 1/8 cup pureed berries (like raspberries or blackberries) (optional)
cheddar cheese or provolone cheese, sliced
Directions:
1. Lay chicken on a plate or cookie sheet, sprinkle salt and pepper on chicken.
2. Put the flour in a bowl and toss the chicken pieces in it individually to coat them.
3. Melt butter in a small frying pan over medium heat.
4. Place the chicken in the pan and cook until its golden brown on both sides.
5. While the chicken is browning, mix the chicken broth, brandy, and berry juice.
6. When the Chicken is golden brown on both sides, pour the broth mixture into the pan.
7. Let the chicken cook uncovered until almost all the liquid is gone.
8. Remove the pan from the heat and place the cheese slices on the chicken. Cover it and let it sit for 5 minutes.
9. Once the cheese is melted, remove the chicken from the pan and serve as hot as possible.
