Ingredients:
6 lbs dark sweet cherries
1 cup sugar
1 cup water
1/4 cup lemon juice
1 1/4 cups brandy
Directions:
1. Wash & pit cherries.
2. Combine sugar, water & lemon juice in a large saucepot.
3. Bring to a boil; reduce heat to a simmer. Add cherries & simmer until hot throughout. Remove from heat; stir in brandy.
4. Pack hot cherries into hot jars, leaving 1/2 headspace.
5. Ladle hot syrup over cherries, leaving 1/4 headspace.
6. Remove air bubbles.
7. Adjust two-piece caps.
8. Process 10 minutes in a boiling-water canner.
