Bran Muffins - very healthy
Ingredients:
1 cup all-bran cereal
1/2 cup boiling water (mix in all bran cereal and set aside)
1/2 cup white sugar
1/2 cup brown sugar
3/4 cup fresh applesauce
2 1/2 cups whole wheat flour
2 1/2 teaspoons baking soda
3/4 teaspoon salt
2 cups all-bran cereal
2 eggs
1 pint buttermilk
1 cup raisins (or more)
1 teaspoon cinnamon (to taste)
1 teaspoon nutmeg (to taste)
1/4 cup flax seed
Directions:
1. Boil water and pour over 1 cup All Bran Cereal - set aside.
2. Cream applesauce, sugar, eggs
3. Add dry ingredients.
4. Add buttermilk.
5. Mix.
6. Add Raisins.
