Ingredients:

  • 1 cup wheat bran
  • 1/4 cup applesauce
  • 1 tbsp honey
  • 1 tbsp molasses
  • 1/2 tsp vanilla
  • 1 1/2 cups low-fat milk
  • 1 egg
  • 1/3 cup brown sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt

Directions:

  1. Pre-Heat Oven to 350 Degrees.
  2. Mix the first 8 Ingredients together.
  3. Mix the remaining Ingredients together in a seprate bowl.
  4. Mix All Ingredients Together.
  5. Using a Tablespoon, Spoon Batter into Mini Muffin pan, Use a nonstick pan or spray with oil.
  6. Bake for about 18 minutes, Check with a toothpick.
