classic bran muffin recipe and almost no fat!
Ingredients:
1/4 cup unsweetened apple sauce
1/3 cup brown sugar, packed
1/4 cup maple syrup
4 egg whites
1 cup soy milk
1 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 1/2 cups wheat bran
Directions:
1. Mix applesauce and sugar together.
2. Add maple syrup and eggs, and beat together well.
3. Add soy milk and then bran.
4. Combine flour, baking powder, soda and salt together.
5. Add to liquid ingredients. You can also add additional ingredients (e.g., raisins or walnuts) at this point.
6. Do not over mix!
7. bake at 400 degrees for 18 to 20 minutes
