Braised Pork Loin With Apple Ratatouille

An interesting combination of spicy apple, carrot and raisin ratatoulle and pork. Only 361 calories per serving and 93 mg. of sodium. American Heart association One-Dish Meals.
Ingredients:
vegetable oil spray
2 1/2-pound boneless top sirloin pork roast, all visible fat discarded.
apple ratatouille
3 large or 4 medium granny smith apples, unpeeled, thinly sliced
1 large carrot, grated
1/3 cup raisins
2 tbs. brown sugar
1 tbs. cider vinegar
1/8 tsp. ground nutmeg
1/8 tsp. ground clove
3 large red potatoes (about 1 1/2 pounds), quartered
1/8 tsp. salt
Directions:
1. Preheat oven to 325 degrees.
2. Heat a Dutch oven over medium-high heat.
3. Remove from heat and lightly spray with vegetable oil spray (being careful not to spray near a gas flame).
4. Brown the roast on all sides, about 10 minutes.
5. Meanwhile, in a medium bowl, stir together the apple ratatouille ingredients.
6. Spoon the mixture beside the roast on two sides.
7. In the same bowl, stir together the potatoes and salt.
8. Put the potatoes around the roast and apples.
9. Bake, covered for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature of the roast reaches 170, the juices run clean, and the pork is no longer pink in the center.
10. Transfer the pork and potatoes to a serving platter.
11. Stir the apple mixture to incorporate the cooking juices.
12. Serve with the roast.
