Braised Greens And Garlic

Any dark green leafy vegetable will work with this basic preparation. Try kale, mustard or chard; mustard will be more bitter, while kale has a subtle earthy flavor. Make sure to use a very flavorful EVOO like the one used for dipping. Read more . I use rapini for the greens when I can get them.
Ingredients:
1 lb kale, mustard greens or chard, (about 8 cups)
1 tbs extra virgin olive oil
5 cloves garlic, minced
1/2 tsp salt
lemon wedges
Directions:

2. Wash greens thoroughly by soaking in lots of cold water.
3. Drain.
4. Chop greens into about 3-inch pieces.
5. Heat oil in a large skillet.
6. Sauté garlic for 2 minutes.
7. Add greens to skillet.
8. (They do not have to be dried off, as the water will evaporate during cooking.)
9. Cover and cook over medium heat for 10 minutes, stirring once in a while to coat all the greens with garlic and oil.
10. Sprinkle with salt.
11. Serve with lemon wedges.
