A great side dish for Greek Lamb Dishes, Braised Green Beans with oregano, tomato and olive oil.
Ingredients:
1 pound fresh green beans; trimmed
3 tablespoons olive oil
1/2 cup diced tomato meats
1/2 teaspoon dried greek oregano leaves
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
2/3 cup boiling water
Directions:
1. Wash and trim the ends of the green beans.
2. Put the olive oil in the bottom of the braising pan and add the beans, diced tomato, oregano, salt and pepper.
3. Heat the pan on high heat and immediately add the boiling water.
4. Cover and allow the water to steam out from under the cover lid until the water is almost gone.
5. Remove from the high heat at this point so the oil and beans will not scorch or burn.
6. Leave the beans covered for a few more minutes then toss and serve.
