Irish potato griddle cake
Ingredients:
1/2 lb potato, cooked in their skins
1/2 lb grated raw potatoes
1 1/2 cups buttermilk
1 3/4 cups flour
1 teaspoon baking soda
salt & pepper
2 tablespoons butter (for frying)
Directions:
1. Remove skins from cooked potatoes. Mash with buttermilk. Add grated raw potatoes, flour, soda, pepper, & salt.
2. Scoop onto hot, buttered griddle to make 3 inch cakes. Fry until golden and crispy.
3. Serve with butter or honey.
