Boursin Potatoes

One of my all time favorite cheese dishes. I have no idea where this recipe came from but it is tried true and and family favorite. Enjoy
Ingredients:
2 cups heavy cream
2/3 cup boursin cheese with black pepper
2 tablespoons minced shallots
1 clove garlic minced
2-1/2 pounds new potatoes scrubbed and sliced 1/4 thick
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
3 tablespoons snipped chives
3 tablespoons snipped parsley
boursin cheese with black pepper
3 cloves garlic minced
1/2 teaspoon salt
8 ounces cream cheese at room temperature
1/4 cup butter at room temperature
2 tablespoons finely snipped parsley
2 tablespoons coarsely ground black pepper
Directions:
1. Generously butter a rectangular baking dish.
2. To make boursin cheese with black pepper make a paste with pressed garlic and salt.
3. Combine with cream cheese, butter, parsley and pepper until smooth.
4. In heavy saucepan heat cream, boursin cheese, shallots and garlic over medium heat.
5. Stir constantly until cheese melts.
6. Preheat oven to 400.
7. Arrange half of the potatoes in baking dish in slightly overlapping rows.
8. Season with salt and pepper then pour half of the cheese mixture over the potatoes.
9. Sprinkle with chives then repeat layers with remaining potatoes, salt, pepper and cheese mixture.
10. Bake uncovered one hour until potatoes are tender but do not overcook.
11. Sprinkle with parsley and serve.
