Boursin Cheese Mashed Potatoes

this is very tasty and the recipe easily doubles for family sized meals.
Ingredients:
3 pounds baking potatoes
1 teaspoon salt
1 package (5.2 ounces) boursin cheese with garlic and herbs- even more if you wish
1/2 cup whole milk or cream
1 tablespoon chopped fresh parsley or to taste
1/2 teaspoon salt, or to taste
1/8 teaspoon freshly ground black pepper, or to taste
Directions:
1. Peel potatoes and cut into 1-inch chunks.
2. Rinse and put in a large saucepan; cover with water and add about 1 teaspoon salt.
3. Bring to a boil.
4. Reduce heat to medium low, cover, and simmer until potatoes are tender, about 25 minutes.
5. Drain the cooked potatoes and transfer them to a large bowl.
6. Add boursin cheese, milk, parsley, 1/2 teaspoon salt, and pepper.
7. Beat with an electric mixer or mash by hand just until blended.
8. Add more milk if you like a creamier or thinner consistency.
9. Taste and add more salt and pepper, if needed.
