This is a tasty recipe for bourbon chicken without the bourbon. It has a delicious thick sauce that tastes like it was made in a restaurant.
Ingredients:
1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized chunks
1/4 cup cornstarch
1/4 teaspoon salt
2 tablespoons canola oil
2 garlic cloves, minced
1/3 cup orange juice concentrate
1/2 cup water
1/4 cup soy sauce
1 tablespoon apple cider vinegar
1/4 teaspoon minced ginger
1/2 teaspoon crushed red pepper flakes
1/4 cup brown sugar, loosely packed
1 tablespoon ketchup
Directions:
1. Mix cornstarch and salt. Toss chicken in cornstarch/salt mixture until lightly coated.
2. Heat oil in large skillet. Add garlic and saute.
3. Add chicken chunks and cook quickly until chicken browns.
4. Remove chicken and set aside. Allow pan to cool slightly.
5. After the skillet has slightly cooled, add the rest of the ingredients and stir until the brown sugar has dissolved. Bring to a boil.
6. Add chicken back in, reduce heat to low, and simmer until chicken is cooked through and the sauce has thickened, about 15 minutes.
7. Serve over rice.
