Bourbon Carrots

Easy to make, these carrots will brighten up any plate.
Ingredients:
3 cups water
1 1/2 lbs baby carrots
1 tablespoon white sugar
1/2 teaspoon salt
2 tablespoons butter
3 tablespoons brown sugar
2 tablespoons bourbon
chopped fresh parsley, for garnish if desired (optional)
Directions:
1. In a large saucepan, bring water to a boil; then add carrots, white sugar and salt.
2. Return to a boil and cook for 5 minutes or until tender.
3. Melt butter and brown sugar in a large skillet over medium-high heat.
4. Stir in carrots and cook, stirring occasionally, 2 to 3 minutes.
5. Add bourbon and cook, stirring occasionally for 3 more minutes.
6. Garnish if desired.
