Remember all those legendary Russian centenarians? Beets, frequently consumed either pickled or in borscht, the traditional Russian soup, may be one reason behind their long and healthy lives. These colorful root vegetables contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers, especially colon cancer. Beets are an excellent source of the B vitamin, folate, and a very good source of manganese and potassium. Beets are a good source of dietary fiber, vitamin C, magnesium, iron, copper and phosphorus. Ingredients:
2 cups of chicken stock
4 beets, peeled and shredded
6 scallions, sliced
1 zucchini, peeled and shredded
2 tbsp brown sugar
1/2 cup shredded red cabbage
2 tbsp dill
1 tsp of lemon zest
2 tbsp of lemon juice
1/2 tsp salt
1 salt and pepper to taste
1 tbsp of sour cream
Directions:
1. Take all the above ingredient, except the sour cream, and place in pot over med to hight heat and let cook for 15 minutes, stirring occasionally.
2. This soup can be served cold or hot with a dollop of sour cream on top. ( 1% sour cream)
3. Very healthy and low in calories.
