one of my favorite salads.
Ingredients:
3 heads bok choy- sliced
bunch of spring onions- chopped
slivered onions
craisins
peeled roasted pumpkin seeds
peeled and roasted sunflower seeds
roasted sesame seeds
dressing- 1/4 cup vinegar
1/4 cup olive oil
2 tablespoons soy sauce
2 cloves crushed garlic
2 tablespoons peanut butter
1/4 cup sugar
Directions:
1. toss together bok choy, seeds, craisins and spring onion
2. blend dressing ingredients together
3. pour over salad and mix
