BOK CHOY SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Carr Estate in Bonham, Texas in 1994.
Ingredients:
3 ounces chow mein noodles
2 bunches baby bok choy cleaned and sliced
3 tablespoons soy sauce
1/2 cup olive oil
1 bunch green onions chopped
1/3 cup granulated sugar
1/8 cup slivered almonds toasted
1/4 cup white vinegar
Directions:
1. In glass jar with lid mix olive oil, white vinegar, sugar and soy sauce.
2. Close lid and shake until well mixed.
3. Combine bok choy, green onions, almonds and noodles in salad bowl.
4. Toss with dressing and serve.
