Bok Choy Salad

Yummy! This recipie was created by my sister-in-law. We love this when the weather is warm outside. Splenda or another sweetener can be substituted for the sugar in the recipie (diabetic friendly). The chicken can also be omitted for a vegetarian version.
Ingredients:
1 bok choy
1/4 cup scallion
1 lb chicken, cooked and cubed or 1 lb canned chicken
2 (3 ounce) packages ramen noodles, crushed, spice packs discarded
1/4 cup slivered almonds
1/4 cup sesame seeds
1/4 cup butter
1/2 cup olive oil
1/2 cup red wine vinegar
1 tablespoon soy sauce
1/2 cup sugar
Directions:
1. 1. Thinly slice scallions, Bok Choy leaves and stems.
2. 2. Melt butter in a frying pan, add slivered almonds and crushed ramen noodles. Brown ingredients, part way through, add sesame seeds and continue to brown. Approx 5 minutes.
3. 3. Mix oil, red wine vinegar, soy sauce and sugar.
4. 4. In a large bowl, combine all ingredients. Enjoy.
