Bok Choy & Red Pepper Laska

This is a quick, simple, tasty Asian soup.
Ingredients:
1 -2 ounce dry noodles
1 -2 ounce thai curry paste (red or green)
1 1/2 cups coconut cream, coconut milk will do but it won't be as rich
1 baby bok choy, roughly chopped
1 red bell pepper, roughly chopped
handful fresh basil leaf
Directions:
1. Cook noodle according to type (some are boiled, others just soaked, drain.
2. In a pan place oil and add curry paste and stir fry for 30 seconds.
3. Quickly add coconut cream and 2 cups of water.
4. Bring to a boil and add vegetables. Simmer for 2 minutes or until vegetables are cooked to your liking.
5. To serve, divide noodles between 3 bowls. Pour over soup and vegetables and top with basil leaves.
6. Feel free to use other veiggies.
