Boiled Peanuts

A southern delight! I've been known to add cayenne pepper to mine-keeps the kids away!
Ingredients:
2 lbs raw peanuts, in the shell
1 gallon water
1 1/4 cups salt
Directions:
1. Place peanuts in a large saucepan.
2. Mix the water and salt to make a birne.
3. Cover the peanuts with the brine.
4. Bring ot a boil, cover, and boil until the shells are tender-around 45 minutes.
5. Remove from heat.
6. Let stand 30 minutes, drain well.
7. Keeps in the fridge for up to 1 week.
