Boiled Chocolate Cake

Many variations of boiled chocolate cake. All produce a moist, tender and delcious cake! Freezes well. Eat iced or uniced. Either way it is yummy
Ingredients:
4 1/2 ounces butter
1 1/2 cups sugar
1 cup water
2 tablespoons cocoa
1/2 teaspoon bicarbonate of soda (baking soda)
2 eggs
1 1/2 cups self-raising flour
Directions:
1. If you don't have self raising flour, use plain flour with 1 heaped teaspoon of baking powder added to it.
2. Preheat the oven to 350F.
3. Butter a 20cm/8 cake tin.
4. Line the base with baking paper.
5. Put the butter, sugar, water, cocoa and baking soda in a saucepan and bring to the boil, stirring constantly.
6. It will bubble up and, be prepared to take it off the stove mmediately. after it boils
7. Set aside to cool.
8. Beat the eggs in a large bowl.
9. Sift in a bit of the flour and then mix in some of the chocolate.
10. Continue until all the flour and chocolate are incorporated.
11. Blend well but don't over mix cake..
12. Pour into the prepared cake tin and bake for 45 minutes or until tested done.
13. Cool on a wire rack.
14. Ice with your favourite icing or leave un-iced.
15. To make a larger cake, use 3 eggs and double remaining ingredients.
