Blueberry Walnut Muffins

Quick and easy.
Ingredients:
1 1/2 cups all purpose flour
1/2 cup bread flour
2 tsp baking powder
1/2 tsp cinnamon
3/4 cup nonfat milk
1/2 cup whole milk
1 egg
2 tbsp canola oil
1 cup frozen blueberries
1/2 cup walnut halves
Directions:
1. Preheat oven to 350 degrees F. and grease a standard muffin tin very well.
2. Combine dry ingredients in a medium bowl and mix lightly.
3. Whisk wet ingredients together in a small bowl.
4. Stirring gently, mix wet ingredients into dry ingredients without trying to mix too well or for too long. Just barely mixed together and the batter should be clumpy.
5. Pour batter into muffin cups until about 2/3 full.
6. Bake on middle rack for about 18 minutes.
7. Switch muffin tin to top rack and bake another 2 mins. If desired, before reinserting into the oven, use a spray butter or melted butter to lightly coat the muffin tops so they brown better.
8. Allow to cool; blueberries will be very hot.
