Blueberry Vellia Finnish Fruit Soup With Sweet Dum...

When I lived in the Keweenaw, My friends mother made this soup. We had this for desert but anytime would be good. She never made the dumplings. I added that after I found it in a Finnish cookbook. So good
Ingredients:
about ! qt. any fruit, strawberries, raspberries, blackberries or blueberris
water to cover
1 c. sugar
11/2 t. cornstarch
finnish dumplings
1 egg, slightly beaten
1 t. melted shortening or oil
1/2c. milk
3/4 c.flour
1/4 c. sugar ( i added this, real ones don't call for it)
1/2 teas. salt
1/2 c. raisins, softened in hot water, drain (optional)
Directions:
1. Put fruit in heavy sauce pan and add water to cover over 1 inch.
2. Add sugar cook to a rolling boil, stirring occasionally.
3. Add cornstarch, stir til a little thick (Need to be a little soupy)
4. Still boiling drop dumpling into hot soup by teaspoon ( dip teas. into soup after each addition,helps slide off spoon) will rise to top of soup when done
5. simmer til dumplings rise to top

7. For dumplings
8. Beat egg, add shortening or oil, milk
9. Stir in flour, sugar and salt, stirring vigorously until smooth
10. Stir in raisins if using
11. Drop by teas. into boiling soup
