lowfat, moist blueberry muffins made with buttermilk
Ingredients:
1 1/2 cups white flour
1/2 cup wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup sugar
1 teaspoon cinnamon
1 1/4 cups low-fat buttermilk
1 egg
2 teaspoons vanilla
1 1/2 cups blueberries
2 bananas, extra ripe and mashed
1/3 cup brown sugar
1/4 cup white flour
2 tablespoons land o'lakes light butter
Directions:
1. preheat oven at 400.
2. combine all dry ingredients.
3. mix buttermilk, vanilla, and egg in seperate bowl.
4. add to dry ingredients.
5. add blueberries.
6. to make topping, mix sugar and flour, cut butter into mix and add to top of muffins.
7. makes 12-16 regular size muffins.
