Ingredients:
1 3/4 cups all-purpose flour
2/3 cup brown sugar
2 teaspoons baking powder
1/2 cup buttermilk
1/2 cup unsalted butter, melted
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1 cup fresh blueberries or 1 cup frozen blueberries, rinsed and drained
2 tablespoons flour
1/4 cup chopped toasted pecans
1/4 cup brown sugar, packed
1/4 cup all-purpose flour
1/4 cup quick oats
2 tablespoons butter, melted
Directions:
1. Preheat oven to 375°F.
2. Toss rinsed blueberries in 2 tablespoons flour until they are coated.
3. Gently mix all ingredients for muffins.
4. Separately, mix streusel ingredients until crumbly.
5. Grease a 12 cup muffin tin and fill with muffins batter.
6. Top muffin batter with streusel.
7. Bake for 25-30 minutes.
8. Cool 10 minutes before removing from pan.
