For a twist on the traditional blueberry pancake, try these! Lemon and yogurt give these a sophisticated tang.
Ingredients:
2 eggs
1 tbsp. lemon zest
1 c. milk
1/2 c. yogurt
6 tbsp. brown sugar
4 tbsp. melted butter + additional for cooking
1 3/4 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
2 c. blueberries
Directions:
1. Whisk together egg, zest, milk, yogurt, brown sugar, and butter.
2. In another bowl, whisk together flour, baking powder, and salt.
3. Add the milk mixture and whisk until just combined. If the mixture seems too thick, thin with additional milk.
4. Stir in blueberries.
5. Brush melted butter on griddle or skillet.
6. Using approximately 1/3 C. batter per pancake, cook over medium heat, 2 minutes per side or until golden, brushing on more butter after each batch.
