Ingredients:

  • 1 1/2 cups white flour
  • 1/4 cup egg beaters
  • 1/8 cup egg beaters
  • 1 1/2 cups orange juice
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1 cooking spray

Directions:

  1. Mix together flour, baking powder, and baking soda.
  2. Add orange juice and egg beaters
  3. Stir until all lumps disappear
  4. Fold in blueberries.
  5. Spray 12 pan with cooking spray and heat pan on medium heat.
  6. Use 2 tablespoons of batter per pancake.
  7. Cook a batch of 3 pancakes at a time.
  8. Turn each pancake when edges are set and bubbles form on top.
  9. Keep pancake batches in warm oven until all are done.
