Each serving is 2 pancakes. This came from Cornell Cooperative Extension. I have not tried this, just posting for safe keeping.
Ingredients:
1 1/4 cups all purpose flour
1 1/4 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons vegetable oil
2 eggs
2 cups plain yogurt
1 1/4 cups 1% milk or 1 1/4 cups skim milk
1 1/2 cups fresh blueberries or 1 1/2 cups frozen blueberries
vegetable oil cooking spray
maple syrup (optional) or confectioners' sugar (optional)
Directions:
1. Combine flours, baking powder and baking soda in a bowl.
2. In a separate bowl mix together oil, egg, yogurt and milk. Add yogurt mixture and mix with the flour mixture and stir until combined. Fold in blueberries.
3. Spray skillet lightly. Spoon small amounts of batter on skillet. Cook evenly. When bubbles appear on top and bottoms are slightly browned, flip.
4. Optional serve with small amounts of maple syrup or confectioners' sugar.
