Blueberry Oat Summer Treat

Ingredients:

Directions:

  1. In a saucepan, combine water and cornstarch over medium heat.
  2. Gradually whisk in sugar until smooth.
  3. Bring to a boil, stirring constantly.
  4. Stir in blueberries.
  5. Cook and stir for 2 minutes or longer, until thick and bubbly.
  6. Remove from heat and set aside.
  7. In a bowl, combine the cake mix and 1 cup oats.
  8. Cut in 6 tablespoons butter until crumbly.
  9. Set aside 1 cup crumb mixture for topping.
  10. Stir egg whites into remaining crumb mixture.
  11. Press into baking dish coated with nonstick cooking spray.
  12. Spread blueberry mixture on top of cake mix.
  13. Combine reserved cup of crumb mixture with remaining oats and brown sugar.
  14. Cut in remaining butter until crumbly.
  15. Sprinkle over top.
  16. Bake at 350 for 30-35 minutes or until golden brown.
  17. May serve with frozen yogurt or lowfat ice cream.
