I enjoy steel cut oatsso when I found this recipe on a box I had to buy it to try it out. Read more . This recipe reminds us of the Baked coffee shops scones in Whitehorse Yukon where we usually spend our summers. We hope you enjoy it as well.
Ingredients:
1 1/2 cups flour ( i use whole wheat)
1 1/4 cups steel cut oats
1/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
2/3 cup melted butter
1/2 cup milk + up to 5 ml
1 egg beaten
1 tbsp honey
1/2 cup fresh or frozen blueberries
(topping)
1 egg beaten
2 tbsp sugar
Directions:
1. Heat oven to 450f
2. In a bowl pour 1/2 cup milk over the oats to soak while measuring out other ingredients.
3. Combine Flour, sugar, baking soda and salt.
4. Combine melted butter and egg and stir
5. Stir wet ingredients including oats into flour mixture with a fork until it just comes together.
6. Add up to 5 ml additional milk if needed.
7. With floured rolling pin, lightly roll dough on a floured surface to 1 cm thick
8. Cut with floured 2 inch cutter re-rolling as necessary.
9. Arrange on un-greased baking sheet 2 inches apart.
10. Brush with beaten egg and sprinkle sugar over tops.
11. Bake for about 12 minuets or until lightly browned
12. Remove from baking sheet and cool on wire rack.
