While I thought these tasted great, I had trouble convincing others to try them. If you can get past the blue color, they are a wonderful and relatively healthy treat. If you use non-dairy margarine instead of butter, they are dairy-free.
Ingredients:
3/4 cup quick oats
1 1/2 cups flour
1/3 cup sugar
1/4 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon nutmeg
2 tablespoons butter, melted
3 tablespoons applesauce
1 egg
1/2 cup orange juice
1/2 teaspoon vanilla
3/4 cup frozen blueberries, thawed
2 tablespoons butter, melted
4 tablespoons sugar
Directions:
1. Combine the oats, flour, sugar, salt, baking powder and nutmeg.
2. Mix well.
3. Mix in butter until crumbly.
4. In a separate bowl, beat the egg and then mix in orange juice and vanilla.
5. Combine the two mixtures and blend.
6. Drain the blueberries and combine with mix.
7. Put batter in a greased pan.
8. Brush the topc with the melted butter and top with sugar.
9. Bake at 375 for 20-25 minutes or until browned on top.
