This one of the best blueberry muffin recipe that i have found. it taste about the same as some of the commercial ones that are made out there.
Ingredients:
1/2 cup butter or 1/2 cup margarine, softened
1 cup sugar
2 eggs
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1/2 cup milk
1 teaspoon vanilla
1 1/2-2 cups blueberries
Directions:
1. Grease or line muffin pans. preheat oven to 375. mix butter and sugar until fluffy. add eggs, one at a time. combine flour, baking powder and salt. combine milk and vanilla. alternately mix liquid and dry ingredients. slowly fold in bluerries. spoon into pans and sprinkle tops with granulated sugar. bake for 30 minutes. cool in pans. makes 12 to 18 muffins (depends how full you fill the pan)
2. substitution: to make low-fat, use only 1/2 cup sugar, 1/4 cup butter and add 1/4 cup applesauce.
