Blueberry Coffee Cake

Ingredients:

  • 1/2 cup butter or 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 2 1/2 cups blueberries
  • 2 cups flour
  • 1/2 tsp salt
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 375 degrees.
  2. Spray 9 x 13 pan with Pam, set aside.
  3. Cream butter and sugar.
  4. Beat in eggs.
  5. Add milk.
  6. Mash 1/2 cup blueberries and add to egg mixture.
  7. Add flour, baking powder salt and vanilla.
  8. Mix well.
  9. Carefully stir in remaining blueberries, pour batter into pan, sprinkle with a bit of sugar.
  10. Bake for 30 minutes, or until firm;.
