Blueberry Cheese Latkes

These are very tasty. They come from my friend Gina who runs a bed and breakfast in East Texas. She serves these at brunch and has also served them as dessert to a soup/salad luncheon. Enjoy
Ingredients:
8 ounces cream cheese softened
4 eggs
2/3 cup all purpose flour
1/2 teaspoon salt
2 tablespoons vegetable oil
1-3/4 cups blueberry pie filling warmed
7 teaspoons cinnamon sugar
Directions:
1. Beat cream cheese and eggs with electric mixer on medium speed until well blended.
2. Add flour and salt then mix well.
3. Heat oil in skillet then drop tablespoonfuls of the cheese mixture in batches into the skillet.
4. Cook 1 minute then turn over to brown the other wide adding additional oil if necessary.
5. Drain on paper towels then place 5 latkes on each dessert plate and top with 1/4 cup pie filling.
6. Sprinkle with 1 teaspoon of the cinnamon sugar and serve.
