These are just too darn good not to share. Dave thought these were the best waffles he had ever tasted. They are very quick and easy to prepare.
Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 -2 teaspoon sugar
2 large eggs, beaten
4 tablespoons butter, melted
2 cups buttermilk
1/2 teaspoon vanilla
1 cup fresh blueberries (you can probably add more, but that was all i had)
Directions:
1. In a mixing bowl, mix flours, baking powder, baking soda, salt and sugar.
2. Add in the eggs, buttermilk, melted butter and vanilla.
3. Gently fold in blueberries.
4. Spray waffle iron with Pam.
5. Pour approximately 1 cup of batter onto a preheated waffle iron.
6. Cook until steaming stops and waffles are nicely browned and crisp.
