A special family recipe handed down from my grandma. This is so delicious and tastes so good served warm with vanilla ice cream.
Ingredients:
for base
1/2 cup solid white shortening
3/4 cup granulated sugar
1 egg
1 cup sifted all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
for topping
2 cups fresh or frozen thawed blueberries
1/2 cup granulated sugar
1/2 cup sifted all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine
Directions:
1. Prepare 11 x 7-inch baking pan by greasing or spraying with nonstick cooking spray.
2. Preheat oven to 350 degrees.
3. In large mixing bowl, cream shortening and 3/4 cup sugar.
4. Add egg and beat until light and fluffy.
5. Sift together 2 cups flour, baking powder, and salt.
6. Add to creamed mixture alternately with milk.
7. Spread in prepared pan evenly.
8. Top with blueberries.
9. In medium bowl, combine 1/2 cup sugar, 1/2 cup flour, and cinnamon.
10. Cut in butter until crumbly with pastry blender or with fork.
11. Sprinkle mixture evenly over blueberries.
12. Bake in preheated oven for approximately 45 minutes or until lightly browned.
13. Cut into squares and serve warm topped with vanilla ice cream, if desired.
